How do you want it to feel? What does it look like? What's the food going to be like? What are the beverage selections going to be like? How big is it going to be? How's it going to be staffed? How is it going to make money? What are the expenses going to be? What's it going to cost to build? What's it going to cost, and how much time is it going to take to pay off any debt or repay investors? It's a huge paper document that puts all of your thoughts and all of your ideas in concrete form on the page. You're going to need a business plan if you're going to seek investors or seek a loan for your business. Because they're going to want to see in black and white what the idea is and what it could mean for them financially. Both when you're writing a business plan and after you've written a draft of your business plan, it's very important to get advice from people who are experts in that particular area. So, it might be important to have an architect or a designer involved as you write the description of the restaurant and how it looks and feels. It might be very important to have an accountant look at your financial projections and the numbers that you write down to show how the business will operate financially. It certainly will be very important to make sure that you get people's opinions, people that you trust, about the description of the food, the beverages, and how the place is going to feel. It may be obvious to you when you write it down, but it may not be obvious to someone who reads it. You need to get people involved and get their opinions. Be open minded, listen to what they have to say, and adjust your business plan as needed. One way to think about your business plan is that it can be your de facto opening budget for your restaurant financially. Therefore, it will be very important to be as detailed as possible. How many seats your restaurant will have will determine how many guests can eat in your restaurant - will determine how many covers, as they're called, you'll do each day. The menu pricing will determine the check average or how much each person will spend. Once you have the number of covers and the check average you know how much revenue you're going to be making. All of that information, all of the expenses. Will you have linen, or will you have bare tables? Will you have flowers or not? What kind of silverware and plateware will you have? Will it be paper napkins or linen napkins? All of those decisions lead to costs. The more detailed, exact, and well thought out your business plan is the more helpful it will be in making you successful in your opening year.

This is a place where you can not be too detailed. Everything is important. Even the box of pencils that you buy to do your staff training. Every little detailed cost will come into play, because unfortunately you won't get revenue until you open, and you're going to need to pay for all of those things without any income to offset them. And also, in the beginning of the life of a restaurant, it's rarely as busy as you want it to be, or as it will become. One of the most significant start-up costs will be construction. Now if you're taking over an existing restaurant, your construction costs might not be too great. But if you're starting with a raw space, the engineering, the ventilation, the plumbing, all will add an extraordinary amount to your construction costs. And unfortunately, it's usually more than you want it to be. Additionally, you're going to need to have staff in place and on payroll in advance of your actual opening. You probably will want to hire your senior staff earliest, then your managers, and then your hourly staff later and closer to the opening. But everybody need to have time to be trained in their position and in the space before you open, or opening night could be a disaster and you could create a very bad first impression. Additionally, there are all the other costs that are involved in equipping a restaurant. Kitchen equipment, refrigeration, stoves, mixers, small utensils. And then all of the equipment that's needed in the dining room. Tables, chairs, glassware, plate ware, service ware, silverware, all of those cost money and need to be brought in before you open. An important thing to remember with supplying your restaurant with equipment, is you don't need it all to open. You can reorder. You may have a need for fewer pieces of equipment to get open, than you need a year or two down the road. Don't buy equipment because you think it's cool. Buy the equipment you need and do that first and grow the restaurant's equipment as the restaurant grows. So once you've done a wonderful, detailed, thorough job of estimating all of your start-up costs, it's important to remember that things are going to happen. Things are not going to go exactly the way you want, maybe your gas doesn't get turned on the day you expect it to, or you're unable to get your permits in time to open. So you need to build in a contingency. You need to build in some percentage of additional costs for your opening. Something's going to happen with construction. Something's going to happen with what's required. And you want to have some cash that you planned on for those things that happen. Unfortunately. Once you have all of your start-up costs prepared, it's important to start thinking about how they'll get paid for, when the bills will come due, and how that will dove-tail with your revenue as you start operating your restaurant, and all those start-up costs lead to that wonderful moment, when you open the doors and start feeding people and making them happy.

In fact, you are what you serve, when it comes to a restaurant menu. The question might be how do you plan a restaurant menu? One thing that's very important to keep in mind is that your restaurant menu will have a very powerful impact on many parts of your restaurant business. It will determine how many people you need in the kitchen to produce the food. It will determine many of your price points. It will determine how your business performs from the point of view of check average. How much is each person going to spend when they eat at your restaurant? And you have a lot of decisions to make when you plan your restaurant menu to make sure that it delivers what you want it to in terms of your idea. In terms of how you want the restaurant to feel for the guests and for your staff. One of the first questions you're going to ask yourself is: How does a restaurant menu embody my idea for my restaurant? If you want to have a southwestern cuisine restaurant, pretty obviously, you need to have a menu that delivers that kind of food. You also want to know how many items you're going to offer your guests. Will you expect them to order a la carte, individual items from the menu, or will you expect them to order what's called "prix fixe", or a fixed priced menu, where they spend one price for multiple courses. All of this depends on the style of your restaurant, the level of service, the level of price that you're expecting your guests to pay. When you're working on your menu it's important to start asking yourself, what is the guest going to think when they see this menu? They may see your menu online. They may see your menu for the first time when they sit down in your restaurant. What are they going to feel? What are they going to think? Are they going to say "Ooh, I want that!" or are they going to be overwhelmed by too many choices? Does the menu make them feel comfortable? Does it make them feel excited? Does it make them feel bored? Does it make them feel overwhelmed? How does the guest feel about the menu and the items on it? Also, what does the menu say about your concept of food? Do you provide seasonal ingredients? Or are you the kind of restaurant that's serving asparagus in December? Do you serve local produce or you serve everything under the sun? It's very important to think like a guest when you're planning a menu. What are the choices I want to make? What are the choices I want to have and how are they going to affect my enjoyment of my meal? Another important thing to know about planning a menu is that a menu should not be something that's engraved in stone and never changes. You need to change your menu and you need to create a menu that you expect to change. There will be dishes that will be more seasonally appropriate. You're not going to sell a lot of beef stew in August in New York City. You need to think about what do people want to eat at different times of year? What is appealing to people at different times of year? Now, if you're really lucky, you'll have a dish that people love so much they come back for it. What you would call a signature dish. A dish that people say, "Oh. I've got to go to that restaurant because I have to have --that--". Well, people become very attached to those dishes. So there's an interesting balance to find. You have to add new things to keep the excitement for your regular guests. You have to hold on to those signature dishes that people keep coming back for again and again. Change your menu seasonally. Think about signature items that people will associate with your business. And keep it fresh. Add new things to keep people interested in your menu.

You can find more about it here: http://30minutes.marketing/ Transcript: Hello and welcome to this week 30 minutes restaurant marketing, this I will talk about How to Create a Restaurant SWOT analysis. As you know SWOT stands for Strengths, Weaknesses, Opportunities and Threats. A strength is a positive internal factor that your restaurant has and that creates an advantage for you in the market. A weakness on the other way is a negative internal factor that your restaurant has and that creates a disadvantage for you in the market. This is the SWOT analysis graphic. So these two squares on top are related to positive or negative internal factors that you somehow have the power to change it inside your restaurant. An example of a strength would be that you have an experienced chef and a weakness would be that your chef has not much experience. Keep in mind that when you are defining your strengths and weaknesses you are always comparing your restaurant to your direct competitors. Going back, if one of your strengths is your chef experience it means that your chef has more experience than the competitor restaurants chefs at same position. An opportunity, is a positive external factor that could be used to generate additional covers and sales. A threat, on the other side, is an external factor that can cause loss of covers and sales. So these two squares in the bottom are related to positive and negative external factors. You should be always on top of your opportunities and threats so you can take the right decisions when you need it. An example of opportunity is new technology that are developed and can be used to promote your restaurant, and a threat example would be a natural disaster that drove seafood prices up. Your goal after creating your SWOT analysis is to bring factors from left to right. Work on transforming weakness into strengths, at the previous example would be offering training to your chef so that he becomes more experienced, and see how you can create some “magic” in the threats so that they can become opportunities. Most of the times to develop a weakness into a strength is much easier has by being an internal factor you have full control on it, but when you can be creative enough to bring a threat into an opportunity it can be very profitable. In my previous threat example that caused the price of seafood to go up exponentially because of a natural disaster, if you know that all your competitor’s will stop selling seafood because it became “too expensive”, you could increase your seafood dishes price and be “the one and only” serving seafood dishes. By being unique, even with high prices, for sure seafood lovers would be “knocking your door”. So by now you know how you can create your SWOT analysis and that you need to develop a strategy to bring weaknesses into strengths and threats into opportunities.
